MAN TINDJAN
A dish from Benin
INGREDIENTS
(serving 10)
5 packs frozen chopped spinach
2 pounds fresh shrimp
10 crabs
3 pounds smoked turkey
1 pound powder shrimp, dried fish
1 pound fresh tomatoes
3 small cans tomato paste
2 large onions
1 cup palm oil
Half handful garlic
One tablespoon ground pepper
1-2 hot peppers
salt to taste
Note: In African cuisine it’s the taste that matters, not so much the measurement.
DIRECTIONS
- Remove crab shells and thoroughly clean crabs
- Peal and clean shrimp
- Grind onions, garlic and fresh tomatoes separately
- Heat a pan with oil, brown the fresh tomato and the tomato paste
- Add a cup of water and turkey
- Add ground pepper, hot pepper and salt to taste
- Cook for approximately 20 minutes on medium heat
- Ad spinach, fish, onion and garlic
- Check seasoning and adjust if necessary, and cook on low heat for approximately 15-20 minutes
- Serve with rice (in lieu of the white cornmeal shown in picture)
